Paratge Qualificat Vallcirera
The PARAJE CALIFICADO VALLCIRERA is located within the privileged agricultural area of the Serralada de Marina ’s Natural Park, between the municipalities of Alella and Tiana, in the southern sector of the Maresme region, 2km from the Mediterranean Sea and 15km from Barcelona. The vines are grown on Sauló soil: an acidic white granite-based sand, with low limestone content, low organic matter and good natural water drain. Our production yields per hectare are below 6,000kg/ha. The plots of the qualified small area used to make the “paraje calificado” cava are:
- AX155 with a surface of 0.2688ha of the Pansa Blanca variety (Xarel·lo), planted in 1992 with a southeast orientation, at 90m above sea level.
- AX160 with an area of 0.8927ha of the Chardonnay variety, planted in 1992 with a southeast orientation, at 90m above sea level.
Winemaking
Made from organic grapes of Vallcirera Paraje: Chardonnay & Pansa Blanca. The extraction of the first pressing must be made through a very light pressure. The fermentation of the Chardonnay takes place in second year French oak barrels, while the Pansa Blanca is fermented in stainless steel tanks. After four months, the blending is made through the traditional method and then there is a minimum ageing of 36 months. It is released on the market just after being disgorged.
Wine Tasting Notes
Sight - Pale yellow with golden hues.
Nose - Flower and ripe white fruit aromas with an aftertaste of nuts with the minerality and the salinity that are characteristics of the area.
Palate - Balanced and structured, recalling the aromas of ripe fruit and nuts. Well-marked acidity which is well integrated with flavours from the aging. The bubbles are fine and persistent. Very tasty and lingering aftertaste.
